Amazing Asian Lettuce Wraps

Yet another one of my "fake out, take out" Asian dishes. Asian food has always intimidated me, but not anymore. These lettuce wraps combine just the right flavors. A sure crowd pleaser. If you aren't into the lettuce wrap then serve it over a bed of rice.

• lb. ground chicken (turkey or beef okay too)
• 2 carrots, shredded
• 3 garlic cloves, minced
• 1 T fresh ginger, minced
• 1 can sliced water chestnuts, drained and diced
• 3 green onions, chopped
• ¾ C fresh snow peas, chopped
• 1/3 C teriyaki sauce
• ¼ C hoisin sauce
• 2 T peanut butter
• 1 T rice vinegar
• 1 tsp sesame oil
• 10-12 Bibb (Butter) lettuce leaves
• 2 Cups white rice, prepared
• 2 carrots, shredded

• 1 can sliced water chestnuts, drained and diced
• 3 green onions, chopped
• ¾ C fresh snow peas, chopped
• 1/3 C teriyaki sauce
• ¼ C hoisin sauce
• 2 T peanut butter
• 1 T rice vinegar
• 1 tsp sesame oil
• 10-12 Bibb (Butter) lettuce leaves
• 2 Cups white rice, prepared
