Apple, Bacon & Pecan Salad

This salad is similar to the Apple Pecan salad from Wendy's that I love....but it's way better :-) The balsamic dressing goes so well with it and adds the perfect sweetness!

For the salad:
2 heads of lettuce, chopped (I like to use a mixture of red leaf, spring mix, and spinach)
2 medium size Fuji apples, washed and diced
5 slices of bacon, cooked and crumbled
1/2 cup chopped pecans
2 boneless, skinless chicken breasts, cooked and diced
For the Light Balsamic Dressing:
2 cloves garlic, minced
1 Tbsp Dijon mustard
1 Tbsp balsamic vinegar
1/2 cup olive oil
salt & pepper, to taste

Toss lettuce, apples, bacon, pecans, and chicken in a large bowl.
Whisk dressing ingredients together and pour over salad. Toss to combine. Enjoy!
