Avocado Chicken Salad with Honey Mustard Vinaigrette {Healthy Salad}

Before my surgery I made this awesome Avocado Chicken Salad. I had a few extra Cooked Chicken Breasts left over from a get together we had as well as some Roasted Tomatoes from the Caprese Flatbread I made. So, I just combined my leftovers added some avocado {which makes everything better}, made this tangy Honey Mustard vinaigrette and viola… an awesome Healthy Salad.

2 T. dijon mustard
4 T. of vinegar
4 T. canola oil
1 tsp. dry basil
salt & pepper
4 cups of fresh spring mix salad
1 cooked chicken breast, chopped
1 avocado, diced
2 oz. of crumbled goat cheese
1/3 cup of pecan pieces
1/2 cup of roasted cherry tomatoes
For the dressing: Mix together Dijon Mustard, dry basil, vinegar, canola oil, and salt & pepper to taste. {this will be tangy from the vinegar, if you want it less tangy add less vinegar}. Whisk together...
