These crispy baked parmesan chicken nuggets stuffed with mozzarella will be a hit with everyone!

For the chicken nuggets:
1 lb boneless, skinless chicken breasts, cut into 2-inch pieces
½ teaspoon salt
? teaspoon black pepper
1.5 oz. mozzarella cheese, cut into strips (about 1.5" x ?" x ?")
1 cup Panko bread crumbs
? cup finely grated Parmesan cheese
½ teaspoon garlic powder
¼ teaspoon Italian seasoning
1 tablespoon olive oil
? cup all-purpose flour
2 large eggs, lightly beaten
For the honey mustard yogurt dip:
? cup Greek yogurt
2 tablespoons honey
1 tablespoon Dijon mustard
2 teaspoons freshly squeezed lemon juice
pinch of salt and pepper, to taste
