One thing I love about Halibut is that if you cook it the right way it tastes like chicken instead of fish. My kids loved this "chicken" meal. :)

Baked Mexican Fish

Ingredients

1 1/2    pounds    Halibut ( or cod )
1    cup    salsa ( (however spicy you want it) )
1    cup    cheddar cheese, shredded ( low-fat )
1/2    cup    corn chips ( coarsely crushed )
1    avocados ( peeled, pitted and sliced )
1/4    cup    light sour cream
1    Can (16 oz)    black beans
   tortilla ( warm )

Directions

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve with tortillas, sliced avocado, sour cream, and black beans.
