BBQ Chicken Nachos

Delicious BBQ chicken combines with chips to make an appetizer or even a great meal!

1 10oz. bag Tostitos Multi-Grain Scoops
1 pound boneless skinless chicken breasts cut into bite sized pieces
1 Tablespoon Extra Virgin Olive Oil
1 small onion diced
1 small red pepper chopped
1 teaspoon black pepper
1 teaspoon crushed red pepper flakes
1/2 cup bottled BBQ sauce
1/4 cup Frank's Red Hot Sauce
1 cup shredded cheddar cheese
1 pound boneless skinless chicken breasts cut into bite sized pieces
1 Tablespoon Extra Virgin Olive Oil
1 small onion diced
1 small red pepper chopped
1 teaspoon black pepper
1 teaspoon crushed red pepper flakes
1/2 cup bottled BBQ sauce
1/4 cup Frank's Red Hot Sauce
1 cup shredded cheddar cheese
In a large frying pan, heat olive oil over medium heat until warm (about 3-5 minutes). Add onion and red pepper stirring and cooking until crisp-tender (about 3-5 minutes). Add chicken breast and black pepper. Increase heat to medium-high and stir constantly until chicken is cooked through (about 7-10 minutes).
Once chicken is cooked through add red pepper flakes, BBQ sauce, and Frank's Red Hot Sauce and stir until combined. (You may decrease the amount of Frank's Red Hot Sauce you use to your own preference). Reduce heat to low and let simmer for about 5 minutes.
On a large platter, arrange chips from bag and scoop chicken mixture over the chips. Top with shredded cheddar cheese and serve.
You could also top with a dollop of Plain, Fat-free Greek Yogurt, chives or salsa.
