Buttermilk Chocolate Spice Muffins

These are the best muffins you'll try. And it's probably the last muffin recipe you'll need. It's simple, easy and adaptable to whichever flavor combinations you desire! I usually make two batches and freeze one, so I can always have one of these at hand.

- 2 1/4 cups all-purpose flour
- 1/2 cup white sugar
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon (and maybe a bit more if you love it)
- 2 tablespoons of vegetable oil
- 1 egg, lightly beaten
- 1 cup buttermilk (I used the dry mix)
- 1 teaspoon vanilla extract
