These muffins aren't fancy, but my family sure gobbles them up! I like to serve them with fresh fruit and scrambled eggs.

1 cup oats (old fashioned or quick)
1 cup buttermilk
1 egg
1 tsp vanilla
1/2 cup brown sugar
1/4 cup oil
1/2 cup chopped dates, craisins, or raisins (optional)
