Delicious roasted veggies and tasty capicola ham are paired together in this quick and easy thin crust pizza.

2 cups halved cherry tomatoes
2 cups thinly sliced red onion
2 cups halved baby eggplant
1 1/2 cups sliced zucchini
1 1/2 cups sliced yellow squash
4 ounces capicola, thinly sliced
4 ounces reduced fat provolone cheese
1 thin crust pizza shell
1/2 cup pizza sauce
1 1/2 cups part-skim mozzarella cheese
