3 cups all-purpose flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
3 medium apples, peeled, cored and diced (to make about 3 cups)
1 Tbsp lemon juice
3 Tbsp brown sugar
2 tsp vanilla, divided
1 1/4 cups vegetable or canola oil
2 cups granulated sugar
3 large eggs
Cream Cheese Layer
8 oz cream cheese, room temperature
1/3 cup granulated sugar
1/2 tsp vanilla
1 large egg
Glaze
2 Tbsp butter
2 Tbsp brown sugar
2 Tbsp white sugar
2 Tbsp heavy cream
1 tsp vanilla
Caramel Sauce
4 Tbsp butter
1 cup firmly packed brown sugar
1/2 cup half-and-half or whipping cream
Dash of salt
1 Tbsp vanilla
