Carrot Zucchini Bars with Lemon Cream Cheese Frosting

This is the perfect recipe for getting picky eaters to eat their vegetables. It's packed with over two cups of shredded vegetables! It's also a lot healthier than traditional sweet zucchini/carrot cakes or bars, with less sugar and sweeteners, but it's soo yummy that your whole family will gobble it up.

For the bars:
2 eggs, slightly beaten
3/4 cup packed brown sugar
1/2 cup canola oil
1/4 cup honey
1 tsp vanilla
1 1/4 cups grated carrot
1 cup grated zucchini
1/2 cup chopped walnuts (optional)
1 1/2 cups all-purpose flour
1/2 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp ground ginger
1 tsp ground cinnamon
For the Lemon Cream Cheese Frosting:
1 (8 oz) pkg reduced fat cream cheese
1 cup powdered sugar
1 tsp lemon juice
