Cheesy Hamburger Rice Casserole

Very versatile casserole with rice, hamburger and veggies! The written recipe makes quite a bit but ingredients can be adjusted accordingly to taste. The beauty of this recipe is that you can use different veggies or even meats. I was running low on supplies at home and didn't feel like big grocery shopping so I just started throwing things together.

2 1/2 pounds hamburger meat
2 1/2 cups uncooked rice
2 small calabas squash, quartered length wise then small chopped
1 red bell pepper, small chopped
1 bag of matchstick carrots
Philadelphia Cream Cheese - spicy jalapeno
Shredded cheese, blend of asiago, parmesan, mozzerella

Brown the hamburger meat. While that is cooking, make the rice according to package directions. Drain the beef when done.
In same pan that you cooked the hamburger, toss in all the veggies. Cook for a few minutes to more or less heat them up. Add the hamburger back in and mix well. Add a couple of spoonfuls of the Philly. Mix well and cover to let it melt. ( I used abt 2 -3 tbsp of the cream cheese and it did NOT make the dish spicy at all. )
Once the cream cheese is melted and mixed in, add mixture to the rice and mix that up well.
Dump the whole thing into a greased casserole dish and top with the shredded cheese.
Bake at abt 350* until cheese is melted.
