Soft creamy potatoes with a hint of ranch flavor and chili seasoning, accented by some cheesy goodness.

4 pounds russet potatoes skins on, cut into 1/4 inch cubes
1 tablespoon chili powder
1/2 teaspoon black pepper
2 tablespoons unsalted butter, melted
1 1/2 cups Colby-Monterey Jack cheese blend, shredded
6 ounces lite ranch dressing
