I have a lot of spaghetti squash right now and I wanted to try a new way to eat it. This Cheesy Spaghetti Squash Casserole tastes delicious and it is good for you!

1 whole spaghetti squash
2 tablespoons olive oil
1 red pepper, diced
1 zucchini, diced
2 cloves garlic, minced
1 tomato, diced
14 can of diced tomatoes
4 ounces shredded mozzarella cheese
