Cheesy Zucchini Lasagna Rolls

This week I made these Cheesy Zucchini Lasagna Rolls. They were so good and my kids liked them even more than regular lasagna.

10 lasagna noodles, boiled so they are soft
2 medium zucchini (7 oz each), grated and squeezed dry
1 cup of low-fat ricotta cheese
½ cup grated Parmesan cheese
1 large egg, beaten
6 Artichoke Hearts, chopped into small pieces (I used the marinated ones)
2 teaspoons of garlic salt
salt and pepper for taste
2 cups Marinara sauce
½ cup part skim mozzarella cheese, shredded
