These Chicken and Broccoli Stuffed Twice Baked Potatoes are full of flavor with a basil parmesan sauce and crispy melted cheese on top.

For the Potatoes:
6 small potatoes
1 Tbsp olive oil
2 tsp kosher salt
For the Sauce:
1 Tbsp extra virgin olive oil
1/2 onion ( diced )
2 to 3 cloves garlic ( minced )
1/2 cup half & half
1/2 cup chicken broth
2 Tbsp fresh chopped basil ( I love Gourmet Garden Basil for this )
1/2 cup shredded parmesan ( divided )
1 Tbsp lemon juice
salt and pepper ( to taste )
Extra Fillings:
1 cup broccoli florets
1 Tbsp water
1 1/2 cup shredded rotisserie chicken
