Chicken & Broccoli Alfredo

This delectable dish has a rich, creamy Alfredo sauce that coats chicken, broccoli and pasta!

1 (16 ounce) package of linguine
3 cups fresh or frozen broccoli florets
4 tablespoons butter
8 skinless, boneless chicken breast halves (about 2 pounds), cut into 1 1/2-inch strips.
2 cans (10 3/4 ounces each) cream of mushroom soup
1 cup milk
1 cup grated Parmesan cheese
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon "Soul Food" seasoning salt
Boil the linguine according to the package directions to al dente in a large saucepan. Add the broccoli to noodles & water during the last 4 minutes of the cooking time. Drain the linguine mixture well in a colander. Set aside. Cut chicken breasts into 1 1/2 inch strips. Heat the butter in a large, deep skillet over medium-high heat. Add the chicken along with the pepper, garlic powder, onion powder & "Soul Food" seasoning salt and cook until well browned and cooked through, stirring often. In a large bowl, blend the soups, milk, & Parmesan cheese until well mixed. Stir the soup mixture and linguine mixture into the skillet along with the cooked chicken and cook until the mixture is hot and bubbling, stirring occasionally. Serve with additional Parmesan cheese, if desired. EXTRAS: Shrimp & Broccoli Alfredo: Substitute 2 pounds fresh extra large shrimp, shelled and deveined for the chicken. Cook as directed for the chicken above, until the shrimp are cooked through.
