One of my husband's very favorite meals is Chicken Cordon Bleu. We have tried all kinds of variations of it, but this one is at the top of the list!

Chicken Cordon Bleu Casserole Recipe

6 ounces bread stuffing ( chicken flavor )
10 3/4 ounce cream of chicken soup ( can )
1 tablespoon Dijon mustard
4 chicken breast ( cooked and cut into bite size pieces; I boiled mine )
3 cups broccoli florets
2 cups chopped ham ( cooked )
6 swiss cheese ( extra thin sliced )


Preheat oven to 375ºF. Prepare stuffing as directed on package. Mix soup and mustard in medium bowl; stir in chicken, broccoli and ham. Spoon into 2-qt. casserole dish sprayed with cooking spray; top with cheese slices and stuffing. Bake 35 to 40 minutes or until heated through.

    I made this last night, I\'d recommend a few things for next time...I will cut the broccoli smaller and most likely precook it, or maybe even use frozen next time, as it was a bit undercooked, and the flavor took over a bit. Next time I will use a younger, better melting Swiss cheese, perhaps Boars Head, as I used an aged Emmentaler, which basically just melted down to a rubber blob! I think the cheese also caused the stuffing not to mix in with the chicken/ham mix, which I think would have been nice. Overall it did have good flavor and I\'d probably make it again!!
