Ingredients

4 tablespoon unsalted butter
2 tablespoon Olive oil
2 carrots ( peeled and diced )
2 celery ( ribs diced )
1 yellow onions ( sweet, peeled and minced )
2 clove(s) garlic ( pressed minced )
3 cups rotisserie chicken ( cubed )
4 ounces button mushroom ( cleaned and diced )
1 cups frozen peas ( thawed )
1/4 cups all-purpose flour
2 cups chicken stock ( low sodium )
1/4 cups white wine ( semi dry Chardonnay )
1 cups heavy cream ( or half ‘n half )
1/2 teaspoon kosher salt ( or to taste )
1 teaspoon ground black pepper ( freshly ground )
1/2 teaspoon thyme ( dried )
1/4 teaspoon basil ( ground sweet )
to taste ready made pie crust ( double )
1 egg ( beaten slightly with 1 tsp. water )
