Chinese Food Recipe: Braised Eggplant

Most famous family cuisine no less delicious than meat!

1 eggplant (~300g)
1 red sweet pepper
1 green sweet pepper
1g salt
20g scallion
4 petals of garlic
30ml blend of starch and water
15ml light soy sauce
3ml dark soy sauce
3ml sesame oil
15g sugar
50ml vegetable oil
Cut the eggplant into diamond shaped pieces. Remove the seeds of the sweet peppers and cut into pieces. Finely cut the scallion and the garlic. Mix the starch, the light soy sauce, the dark soy sauce, the sesame oil and the sugar into the flavoring sauce. Heat the oil in the frying pan. Fry the eggplant until it turns gold. Drain. (The remaining oil for frying can be reused after filtering.) Leave a little remaining oil in the pan and remove the rest. Sauté the minced scallion and half of the minced garlic. Add the eggplant and sweet plant, sauté for half a minute. Add the flavoring sauce and stir to make it evenly wrap the materials. Take out the dish and add the other half of the minced garlic on top of it.
