These Chocolate Chunk Peanut Butter Cup Cookies are soft, chewy, and loaded with chocolate chunks and mini peanut butter cups!

1 cup unsalted butter, softened
3/4 cup packed light brown sugar
1/3 cup white sugar
1 (3.4 ounce) package instant vanilla pudding mix
2 eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 cup chocolate chunks
1 cup Reese\'s Peanut Butter Cups Mini\'s Unwrapped, chopped
