Chocolate Cupcakes with Coconut Cream Cheese Icing

These cupcakes are moist and light (so light) and so good that you won't be able to keep your hands off of them. Coconut or no coconut (whatever your family prefers - I actually did mine half and half), the icing is also divine.

For the cupcakes:
1/2 cup boiling water
1/2 cup cocoa powder
1/2 cup butter, room temperature
1 1/4 cups sugar
2 eggs, room temperature
1 teaspoon almond extract
1 1/2 cups cake flour
1 teaspoon baking powder
1/4 cup baking soda
1/4 cup salt
1/2 cup sour cream

For the icing:
4 oz butter, room temperature
4 oz cream cheese, room temperature
2 cups powdered sugar
1 teaspoon almond extract
1/2 cup - 1 cup sweetened shredded coconut
