These cupcakes are moist and light (so light) and so good that you won't be able to keep your hands off of them. Coconut or no coconut (whatever your family prefers - I actually did mine half and half), the icing is also divine.

Ingredients

1/2 cup water ( Boiling )
1/2 cup cocoa powder
1/2 cup butter ( room temperature )
1 1/4 cups Sugar
2 ounces eggs ( room temperature )
1 teaspoon almond extract
1 1/2 cups cake flour
1 teaspoon Baking powder
1/4 cup Baking soda
1/4 cup salt
1/2 cup sour cream

Directions


For the icing:

4    ounce    butter ( room temperature )
4    ounce    cream cheese ( room temperature )
Powdered Sugar 1    teaspoon    almond extract
1/2    cup    coconut, sweetened ( Shredded )
