This sundae uses Cajeta, a mexican caramel spread made with goats milk. The cajeta and toasted coconut is a great combination.
Coconut Cajeta Sundae

Ingredients2 cups vanilla ice cream
1/2 cup whipped cream
1/2 cup coconut ( shredded, toasted )
2 teaspoons pecans ( chopped )
2 tablespoons caramel topping ( cajeta )
DirectionsPut 1 cup of the ice cream in a bowl. Top with half of all the remaining ingredients. Do the same in a second bowl.
