Coconut Crusted Tilapia Recipe

I am loving fish right now! I was experimenting and came up with this recipe of Coconut Crusted Tilapia. I have to admit... this might not have made it to my plate. I just kept picking at it while I was preparing the side dishes that when it came time to eat it... mine was gone. My mouth is watering like crazy just thinking about it!

6 Pieces of Tilapia, thawed
1/4 cup shredded coconut
1/4 cup Italian Bread Crumbs
1/4 cup Whole Wheat Ritz Crackers, crushed
1/3 cup egg whites
olive oil spray
1/4 cup shredded coconut

Preheat oven to 400 degrees
Place foil on a cookie sheet and spray with non stick spray.
Combine coconut flakes, Italian crumbs, and crackers in a bowl. Put egg whites in another bowl.
