Copycat Famous Dave's Cornbread Muffins

I am a SUCKER when it comes to cornbread with melted honey butter on top . . . and there is something about those yummy muffins from Famous Dave’s that make me eat at least 5 or 6 every time I go there! Now you can make them at home with this simple recipe.

1 3/4 cup cornmeal
1 1/2 cup all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
2 eggs
3/4 cup sugar
1/4 cup butter-flavored shortening
1/2 teaspoon vanilla extract
1 cup milk
1/3 cup vegetable oil
1/4 cup honey
Butter ( for topping )
