Peanut flavored shells and salted caramel buttercream make these elegant cookies tasted like famous, baseball passtime snack, Cracker Jacks.

7 ounces powdered sugar
2 ounces almond meal
2 ounces peanuts
4 ounces egg whites
pinch cream of tartar
1/2 teaspoon vanilla extract
4 tablespoons butter
1 1/2 to 2 cups powdered sugar
2 to 3 tablespooons caramel ice cream topping
1 to 2 teaspoons salt

Place the frozen peanuts in the bowl of a food processor with 2 ounces of powdered sugar. Process until the peanuts are ground into a fine powder. The addition of the powdered sugar should help the peanuts...
