Cranberry Avocado Salad with Candied Sunflower Seeds

Creamy avocado, chewy dried cranberries, and crunchy candied sunflower seeds combine to make a bowl full of texture and flavor. This is the perfect summer salad to serve as a side dish or for a light main dish.

Dressing:
½ cup sugar
1 ½ Tbsp poppy seeds
1 tsp paprika
2 tsp dried mustard
1 Tbsp dried mustard
1 Tbsp minced onion
1 tsp sea salt
1 tsp black pepper
½ cup white balsamic vinegar
1/3 cup canola oil
1/3 cup extra virgin olive oil
Salad:
12 ounces spinach, arugula,
or favorite greens
1 small bunch cilantro, chopped
2 avocados, peeled and halved
1 ½ cup dried cranberries
1 ½ cup candied sunflower seeds
Candied Sunflower seeds:
¼ cup seeds (or nut)
2 Tbsp sugar
2 Tbsp water
½ tsp cinnamon
½ cup sugar

Candied Sunflower seeds:

Whisk dressing ingredients all together.
Candied Seeds:
Place seeds, sugar, cinnamon and water in small sauce pan. Stir to dissolve and bring to a boil. Immediately turn down and simmer for 5-7 minutes....
