An easy #MeatlessMonday, filling curry style dish.

1 cup onion, chopped
2 cups carrots, chopped
2 cups potatoes, peeled and diced
3 cups low fat chicken broth
1 cup lite coconut milk (Taste of Thai)
2 tablespoons curry powder
2 teaspoons garam masala
14 ounces frozen cauliflower
28 ounces canned chickpeas, rinsed and drained
3 cups brown rice, cooked
2 cups carrots, chopped
2 cups potatoes, peeled and diced
3 cups low fat chicken broth
1 cup lite coconut milk (Taste of Thai)
2 tablespoons curry powder
2 teaspoons garam masala
14 ounces frozen cauliflower

Heat large skillet coated with cooking spray over medium-high heat. Add onion and saute 2 minutes.
Add carrots and saute 3 minutes.
