Golden, delicious saffron baked beignets are a twist on the New Orleans favorite.

2/3 cup milk
1 tablespoon sugar
1 1/4 teaspoon active dry yeast
1/2 cup whole wheat pastry flour
2 cups unbleached, all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 large egg, lightly beaten
3 tablespoons butter, diced
powdered sugar
1/8 teaspoon saffron
