Easy Peasy Lemon Bars

Tangy and a little sweet; these lemon bars are the perfect ending to a great day and perfect to cheer you up on a bad day.

1 1/2 cup flour
1/2 cup powdered sugar
1 cup butter
1 1/2 cups sugar
1/2 cup lemon juice
3 eggs

Preheat oven to 350 degrees F, Mix the flour and powdered sugar, then cut in the butter with a pastry cutter or fork. Spread the dough in the bottom of an 8x8" pan and push down to create the crust. Bake in the oven for 25-30 minutes.
Increase the oven temperature to 375. Mix the remaining ingredients with a whisk and pour on top of the baked and slightly cooled crust. Bake for 20-25 minutes or until the center has set. Let cool and sprinkle with powdered sugar if desired.
