Easy Southwest Chicken Bake

Dinner tonight is going to be fast and easy . . . this is one of my favorite dishes to throw together in a hurry and it’s delicious.

4 cups cooked chicken, cubed (I used rotisserie chicken)
2 (14 oz) cans green enchilada sauce
1 1/4 cups sour cream
9 (6 inch) corn tortillas, cut into 2 inch pieces
1 (4 oz) can diced green chilis
2 roma tomatoes, diced
3 cups cheddar cheese, shredded
salt and pepper to taste
Preheat oven to 375 degrees. Spray a 13x9" pan with non-stick cooking spray. In the prepared pan, layer half of the chicken, enchilada sauce, sour cream, tortillas, chilis, tomatoes and cheese. Repeat...
