Favorite Chicken Tikka Masala

Chicken Tikka Masala that will knock your socks off!

For the marinade:
1 cup plain yogurt or greek yogurt
1 Tbsp lemon juice
1 Tbsp minced fresh ginger
1 tsp salt, or to taste
1 clove garlic, minced
2 tsp cumin
1 tsp cinnamon
1/4 tsp cayenne pepper
1 tsp ground black pepper
6 boneless skinless chicken tenders (or 3 chicken breasts)
For the sauce:
2 Tbs olive oil
1 clove garlic, minced
1/4 cup chopped onion
3 tsp garam masala (or substitute 2 tsp paprika and 2 tsp cumin)
1/2 tsp salt
1 cup half & half
1 (8oz can) tomato sauce
1/4 jalapeno pepper, seeds removed, finely chopped (optional)
1/4 cup chopped fresh cilantro and/or crushed almonds
4 cups of cooked jasmine or basmati rice

In a large bowl, combine yogurt, lemon juice, ginger, salt, garlic, cumin, cinnamon, and black pepper. Stir in chicken, cover, and refrigerate for at least 1 hour.
