The Feasty Boys put their own spin on this 19th Century sandwich straight out of New Orleans featuring fried oysters, fried tomatoes & bacon complimented by a creamy horseradish sauce.

1 pint Shucked Oysters
1 loaf Italian Bread
1 lb. Bacon
2 Tomatoes, sliced
1 pint Sour Cream
2 tsp. Horseradish
2 cups Pancake Mix
1/2 cup Romano Cheese, shredded
Old Bay Seasoning
Butter
Preheat oven to 375 degrees. Cut top quarter (lengthwise) off of the Italian Bread loaf. Remove most of the inside of the bread loaf creating a "bowl-like" effect. Liberally butter the inside of both the loaf and the top and insert in oven on a cookie sheet for approx. 5-7 minutes or until bread has hardened and somewhat toasted. Remove from oven and sprinkle Romano cheese over inside bottom of loaf. While bread bakes fry off the bacon, reserving the bacon grease for later use... While the bacon fries, place pancake mix in a large bowl and begin to flour oysters by simply removing from oyster liquid or "liquor" and dredging in pancake mix. -Once the bacon is completely fried, remove from grease and place on paper towel to drain. Immediately begin placing oysters in the reserved bacon grease, frying to a golden brown. As oysters are fried, remove from grease and place inside the cheese lined Italian Bread. - Slice tomato into hearty slices and fry in the remaining bacon grease for several minutes. - While tomatoes fry, combine sour cream and horseradish. Spoon liberally over oysters. - Chop the cooked bacon and sprinkle over the oysters/horseradish sauce inside the loaf - Top off with the fried tomato, sprinkle with Old Bay Seasoning, replace top of loaf and DIG IN!!
