Fresh Garden Bruschetta

I’ve always loved simple, delicate foods, but especially in the summer I am a lover of all things quick, easy, & full of color. You may have heard me rave about/question my judgement over planting so many tomato plants this spring (I have 7 Roma tomato plants & 3 cherry tomato plants). Well, now is the time when I celebrate my ridiculousness! I currently have 30 CUPS of blanched, peeled, seeded, chopped tomatoes in my freezer, just waiting until the season changes & I am brave enough

10 Roma tomatoes
2 cloves garlic, minced
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
6-8 fresh basil leaves, chopped.
Salt & freshly ground black pepper to taste
1 loaf ciabatta bread
1/4 cup olive oil
1/2 cup sharp white shedder, shredded
