Garlic and Dill Smashed Potatoes

212

So, my favorite part of Thanksgiving is definitely the potatoes - I love topping my roll with them. No, it's not very lady like, but it just tastes so good!! I love smashed potatoes because there are still bigger chunks of potatoes and the skins are still in tact. They are super simple to whip up, and you can add as little flavor or as much flavor as you'd like. Either way, these Garlic and Dill Smashed Potatoes will be a great side dish for this Thanksgiving (or really for ANY meal!).

8
2 1/2 pounds red potatoes
4 oz cream cheese, softened
1/4 cup milk
1/4 cup butter, softened
1 1/2 teaspoons dill weed
1 teaspoon sea salt
1/2 teaspoon garlic powder
1/2 teaspoon white pepper
Cut potatoes into 1-2" pieces and place in a large saucepan filled with water. Cover the pan, bring it to a boil, and let them cook for about 20 minutes or until they are soft when pierced with a fork....
