Rice Pudding meets Apple Crisp. All in one gluten-free package.

5 apples (I used Gala), peeled, cored,and chopped
3/4 cup white sugar
2 tbsp cornstarch
1 tsp cinnamon
1/8 tsp nutmeg
2 cups brown rice, cooked
1 tbsp lemon juice
1 cup brown sugar, divided
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup gluten-free flour
2 tbsp butter, chilled
3/4 cup white sugar
2 tbsp cornstarch
1 tsp cinnamon
1/8 tsp nutmeg
2 cups brown rice, cooked
1 tbsp lemon juice
1 cup brown sugar, divided
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup gluten-free flour
2 tbsp butter, chilled
Preheat oven to 350. Coat baking dish with non-stick spray.
In a large bowl, combine first five ingredients.
Add rice, lemon juice, 1/2 cup brown sugar, cinnamon, and salt to apple mixture.
