Gluten Free Pumpkin Muffins
Ingredients1 1/2 cups gluten free flour ( all purpose )
2 teaspoon xanthan gum
2 teaspoon Baking powder
1 teaspoon Baking soda
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon ginger
1/2 cup butter ( melted )
1/2 cup pumpkin
2 teaspoon vanilla
1/2 cup milk
1/2 cup chocolate chips ( optional )
1 cup Sugar
DirectionsPreheat oven to 350°F
In a medium bowl , mix together dry ingredients. Set aside.
In a separate bowl, mix together remaining ingredients except chocolate chips. Add dry ingredients and mix thoroughly. Mix in the chocolate chips and bake 15-20 minutes or until, toothpick inserted into the center comes out clean.
