Delicious and easy. These gluten free vanilla cupcakes are great if you have given up gluten or are allergic, but want a nice home baked treat.

Gluten-Free Vanillla Cupcakes

Ingredients

1 1/2 cup gluten free flour ( all purpose )
1 tablespoon xanthan gum
1 teaspoon Baking powder
1/2 teaspoon Baking soda
pinch salt
2 eggs
1/2 cup butter ( melted )
1/2 cup milk
1 cup Sugar
2 teaspoons vanilla

Directions

Preheat the oven to 350 degrees Fahrenheit. Mix the first 5 ingredients in a medium bowl. Mix the rest of the ingredients in a separate bowl. Combine dry and wet ingredients and mix well, but don't over mix. Fill each cup 3/4 of the way full. Bake 20-25 minutes.
