Greek Panzanella Salad with Homemade Greek Salad Dressing

What is a panzanella salad? It is traditionally an Italian salad made with leftover bread to soak up a great vinaigrette with chunky vegetables. I’ve made a little twist using feta and Greek salad dressing for this GREEK panzanella salad! SO yum!

For the salad dressing:
3/4 Cup Extra Virgin Olive Oil
 
1 Cup Red Wine Vinegar
 
2 tsp Garlic Powder
 
2 tsp Oregano, dried
 
2 tsp Basil, dried
 
1 1/2 tsp Onion Powder
 
1 1/2 tsp Dijon Mustard
 
1 Tbls Granulated Sugar
 
1 tsp Maltodextrin, optional (used as a thickening agent for the dressing, helps to keep dressing combined as well)
 
Salt and pepper to taste
For the salad assembly:
1 each Chicken Breast, boneless skinless
 
1 each Romaine Lettuce, head, shredded
 
1/2 Pint Grape Tomatoes, sliced in half
 
1/2 each English Cucumber, cut in medium chunks
 
1/2 Cup Feta Cheese, crumbled
 
Homemade Garlic Croutons 1/2 a recipe
 
Pickled Red Onions for garnish
For the salad dressing: Combine all ingredients in a blender until thoroughly combined. You can also use an emulsion blender or a whisk. If using a whisk, combine all ingredients except for the oil....
