Hash Browns, shaped into nests, filled with dyed hard boiled eggs! Perfect Easter breakfast!

3 Medium Potatoes, peeled
1 Medium Onion, peeled
Salt and Pepper
4 Eggs
Assorted Gel Food Colouring, diluted in small pots of water
