A healthier but still delicious carrot. Unsweetened, natural applesauce is substituted for oil and Splenda artificial sweetener is used in place of sugar. Because the cake is a bit healthier, the cream cheese frosting wasn't modified (figured it could be more decadent if the cake wasn't AS fattening)

Ingredients

2 cups flour
2 teaspoons ground cinnamon
2 teaspoons Baking powder
1 teaspoon Baking soda
4 eggs ( room temperature )
1 teaspoon Vanilla extract
1 cup applesauce ( unsweetened, natural )
1 SPLENDA ( sweetener substitute )
4 cups carrots ( grated )

Directions


Cream cheese Frosting

1/4    cups    unsalted butter
8    ounces    cream cheese
Vanilla extract Powdered Sugar

1. For frosting, beat together butter and cream cheese. Once they are well mixed, add in vanilla and powered sugar, slowly.
2. Beat until creamy, scraping down the sides of the bowl.
