This has been my "go to salad" for a long time. We have it every other week or so and we still love it! This recipe makes so much I usually have it for lunch a couple of times. This is also the salad that I bring to potlucks or big dinners - it really feeds the masses!
Healthy Meals Monday: Simple Southwest Salad

Ingredients3 cups spinach
3 cups romaine lettuce
8 ounces canned yellow corn
8 ounces black beans ( rinsed and drained )
1 cup olives ( chopped )
1/2 cup mozzarella cheese, shredded
1 tomato ( chopped )
1 avocados ( chopped )
1/4 cup Almonds ( sliced )
DirectionsThrow all ingredients together in a large bowl and mix well. Serve with your favorite dressing.
Want to make it your main dish? Just add some chopped chicken!
