This is a no fuss healthy two bean salad with herbs in a lemony vinaigrette. Great on its on with some crusty bread for a light lunch or a perfect side for dinner. Also a great make ahead dish.

Ingredients

6 ounces green beans ( trimmed and cut into 1 inch pieces )
1/4 cups parsley ( chopped flat leaf )
1/4 cup Mint Leaves ( chopped )
1 tablespoon pine nuts
1 tablespoon lemon zest ( finely grated )
1/4 cup Olive oil
to taste parmesan cheese ( shavings )
to taste salt and pepper
1 Can (14 oz) cannellini beans ( rinsed and drained )
2 tablespoons capers ( 2-3 )
1/4 cup dill weed ( chopped )
1 tablespoon Lemon juice
