This is a hearty soup chock full of vegetables. I love to whip a batch of this up on the weekend to have leftovers for the week.
Hearty Vegetable Beef Soup
Ingredients2 pounds beef, chuck for stew
1 Can (8 oz) tomatoes ( petite cut )
1 Can (16 oz) beef broth ( low sodium )
3 celery ( stalks )
1 pound mixed vegetables ( 1 lb bag )
Melt 2 tbsp. of butter in pan and slowly cook beef until done. While beef is cooking, pour broth into soup pot. Chop and add onions, celery, and potatoes to broth. Pour in frozen veggies. Cook on medium heat for 20 minutes then add beef. Simmer until ready to eat. May add salt and pepper to taste.
