With Fall just around the corner we all need Chicken Stock!

1 Medium rotisserie chicken
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 - 1 Medium onion (peeled and sliced in quarters)
2 Medium garlic
2-3 Medium parmesan rinds
1 Medium mesh strainer
In a steel large pot or a dutch oven place boned rotisserie chicken and cover with cold water. The cold water draws out the juices. If there is still some meat left on the bones the stock does not need much...
