Kale, Olive & Chickpea Salad

A light, healthy salad made with black olives, kale and chickpeas and tossed with an olive oil and lemon vinaigrette.

1 (16 oz.) can California Black Ripe Olives
1 (15 oz.) can chickpeas, rinsed and drained
2-3 cups kale, finely chopped
1/2 cup thinly sliced red onion
1/4 cup olive oil
2 tablespoons white wine vinegar
2 tablespoons lemon juice
2 tablespoons minced shallot
1 clove garlic, minced
1 teaspoon sugar
Salt and pepper, to taste
1-2 tablespoons chopped fresh parsley
2-3 tablespoons grated Parmesan cheese (optional)
