Kale with Miso and Onion

A little oriental flavor with this Western vegetable.

1 pound kale
1 tablespoon olive oil
1 tablespoon miso
ΒΌ cup onion, chopped
1 tablespoon olive oil
1 tablespoon miso
ΒΌ cup onion, chopped
Tear off the leafy parts of the kale. Chop into small pieces.
Boil a pot of water and cook kale for 2 to 3 minutes. Drain.
Mix miso, olive oil and onion.
Heat the miso mixture in a pan, use a spatula to break up the miso.
Add kale, cook over medium heat, stirring, until sauce is mixed with kale, about 3 minutes.
Add salt to taste if you wish.
