Lemon Green Tea Muffins

These muffins smelled soo good when I took them out of the oven. There's a light scent of sweet and herbs. The taste is layered, something I have never experienced in a muffin. First , you taste the lemon, but there is a distinct aftertaste of tea. This is a very complex, yet tasty little muffin. I hope you enjoy them as much as I do!

1 1/3 cups unbleached all-purpose flour
1/3 cup sugar or fructose
1 tablespoon loose green tea, ground with mortar and pestle
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup lemon yogurt
1 egg white
2 tablespoons vegetable oil
½ teaspoon fresh lemon zest
1 tablespoon lemon juice

Note: To ramp up the lemon taste, I used Celestial Seasoning’s Lemon Zinger Green Tea. You could use any kind of green tea that you like.

Blend flour, sugar, tea, baking powder, baking soda and salt in large bowl. Whisk together yogurt, egg white, oil, lemon zest and lemon juice in another bowl. Pour wet ingredients into dry ingredients. When batter is blended, spoon into muffin cups. Bake 15-25 minutes, checking frequently. When muffins become firm and begin to brown, brush with butter. Allow to bake one more minute then remove from oven.
