These lemon bars have some added flavor with mango puree. Inspired by Lemonade with mango.
Lemon Mango Bars

Ingredients1/2 mangos ( pureed )
3/4 cup Sugar
1 tablespoon Powdered Sugar
1/2 cup butter ( cold )
1 cup flour
1 teaspoon salt
DirectionsPreheat the oven to 350 degrees farenheit.
Cut the butter into cubes and put in a medium bowl. Add the powdered sugar, flour, and salt and cut with a pastry cutter or fork. When you can pinch the mixture together and it stays together it is done. Spread the crust into the bottom of an 8x8 pan and press down firmly. Bake for 20-25 minutes.
While the crust is in the oven, make the custard. Peel the mango with a vegetable peeler. Cut it around the pit and puree it in the blender. Put through a fine mesh strainer to get rid of the pulp. Set aside. Zest and Juice the lemon. Mix together half the mango puree, lemon juice and zest, sugar, and eggs. When the crust is cooked and cooled a little, spread the custard mixture on top of the crust and bake 30-35 minutes. Sprinkle powdered sugar on top.
