Lemony Sweet and Spicy Chicken

Chicken is breaded w/ breadcrumbs seasoned with lemon zest and NO SALT. This recipe is a great example of how to lower your salt intake without losing the flavor.

2 boneless, skinless chicken breasts, cut into chunks
1/4 C flour, all purpose
1 egg, beaten
1 C breadcrumbs, dry
1 T parsley, dry
Zest of 1 lemon
1/3 C olive oil
For the Sauce
1 T cornstarch
1/3 C freshly squeezed lemon juice
Zest of 1 lemon
1 C chicken stock
1 tsp ginger paste
2 T brown sugar
1/8 tsp crushed red pepper flakes (more or less to your preference)
1/4 C flour, all purpose

3.Place beaten egg in a shallow bowl .
4.Combine breadcrumbs, parsley and lemon zest in a third shallow bowl/plate.
